Vodka Cured Salmon, Pesto & Cream
Ingredients
1. Cured Salmon
  • 1 Salmon Fillet
  • 500 g Seasalt Flakes
  • 250 g Brown Sugar
  • 2 Lemons
  • 6 Star anise
  • 100 MLs Vodka
Pesto
  • 1 Bunch Basil
  • 150 g Garlic
  • 500 MLs Olive Extra Virgin Oil
  • Salt (to your requirements)
  • 150 g Parmesan Cheese
Salad
  • 10 g Mixed salad leaves
  • 6 Cherry Tomatoes
Crostini
  • 0.5 Breadstick
Decoration
  • 15 g Crème Fraiche


Method
Step 1 – Cured Salmon
  1. Clean Salmon – removing all the bones and scaling
  2. Crush the star anise and place in to a bowl with salt and all brown sugar.
  3. Sprinkle a small layer of mix on a tray
  4. Slice lemons and place on mix in the shape of the salmon
  5. Place slamon on lemons skin side down
  6. Cover salmon with salt
  7. Sprinkle vodka over salmon
  8. Cover & place in fridge for 24 hours
  9. After 24 hours, wash the salt and remove lemons
  10. Place on board and slice thinly
Step 2 – Pesto
  1. Place all picked basil, garlic and parmesan in a blender and blend
  2. Pour in Extra Virgin Olive Oil and blend until smooth paste
  3. Taste and add salt as required
Step 3 – Salad
  1. Clean salad leaves
  2. Season leaves
  3. Cut tomatoes in half and season
  4. Dry tomatoes in very low heat for over 6 hours
Step 4 – Crostini
  1. Slice bread stick thinly
  2. Spread lightly with Pesto
  3. Toast until crispy
